I'm so happy to be able to share with you my all-time favorite, a very special recipe for the most famous and delicious Turkish street food LAHMACUN! It is such a simple recipe from dough to filling. You must try it and let me know what you think! • Prep time: 10- 20 min • Cooking time: 10 min Ingredients: For the dough (8 lahmacun) • 300 g all-purpose flour • 5g dry yeast • 1tsp sugar • 180 ml water • 1 tsp salt or skip the dough and use 8-9 lavash/ tortuga breads as the base For the meat filling: • 300 g any minced meat /mix beef and lamb or you can use just lamb, beef or chicken as well • 1-2 onions • 2 cloves of garlic • 50 g smoked turkey /or any cured meat • 150g tomato puree • 1 full tsp of tomato paste • 50g parsley, chopped • 1 tbsp yogurt or water • 1 tsp salt • 1 tsp chili flakes • 1 tsp smoked paprika • 1tsp cumin (optional) Method: 1. Preheat the oven 220-240C. 2. To make the dough, mix the flour, yeast, sugar, water, and the salt in a bowl and knead for 2 min. 3. When the dough becomes smooth and less sticky, cover and let it rest for 10-15 min in a warm place. 4. Meanwhile, for the filling, pulse the onion, garlic and smoked slices turkey in a food processor until they become a paste. Smoked/cured meat helps enhance the flavour. 5. Mix the paste, minced meat, tomato puree, tomato paste, yogurt, salt, black pepper, chili flakes, cumin and the paprika. If the mixture isn’t juicy enough, add a couple of tbsp of water to spread the mixture easier. 6. Add in the parsley and give it a last mix. 7. To make the dough, divide the dough into 8 equal balls. Dust the work surface and the rolling pin with flour and roll out the balls around 25x30 cm. Spread the filling on the dough and bake for about 8-10min and repeat with the rest. 8. To enjoy the lahmacun at its best, thinly slice of onion and mix it with sumac and olive oil. Place the onions on lahmacun with parsley, squeeze some lemon and roll it. If you also have a glass of ayran then it is a perfect feast! 9. Enjoy & hit that ‘LIKE’ button 🤩
