The recipe Makes 12 6 eggs 400ml milk (1 2/3 cups) 200g plain flour (1 2/3 cups) Salt 1/2 cup avocado oil 1 12 muffin cup pan In a large bowl whisk together the eggs, milk flour and salt until smooth and creamy. Refrigerate the batter for at least an hour. Preheat the oven to 425 degrees Fahrenheit. Distribute the avocado oil into the 12 muffin cups pan. Heat until the oil is smoking. Carefully remove the tray from the oven and pour about an inch of batter in each. Return the tray to the oven and cook until risen and golden brown. Serve immediately. www.theroyalchef.com
