Coat evenly with 100 g of dry potato starch. 2️⃣ Deep-fry the eggplant Heat the oil to about 170°C. Fry the eggplant until golden and crispy, then remove and drain. Let rest for 2 minutes, then re-fry for 20 seconds for extra crispiness. 3️⃣ Make the sauce Leave a little oil in the pan, add minced ginger, garlic, and dried chili, and stir-fry until fragrant. Pour in the prepared sauce mix and bring it to a gentle boil over medium heat. 4️⃣ Coat and finish Add the fried eggplant and toss quickly so it’s evenly coated with sauce. Stir in the cornstarch-water mixture and cook until the sauce thickens and becomes glossy. Before serving, sprinkle toasted sesame seeds and garnish with parsley leaves. ✨ Tips Sprinkling salt on the eggplant beforehand reduces oil absorption and keeps it crispy. Re-frying for 20 seconds makes the exterior crispier and prevents softening.
