Learn step-by-step how to create restaurant-style eggplant masala and aromatic fish soup at home—perfect for family meals or festive dinners. ✨ Show Name: Tarka 👩🍳 Host / Chef: Rida Aftab 📅 Air Date: 25 November 2025 📡 Channel: Masala TV Bring bold flavors and homemade magic to your dining table with these easy, classic Pakistani recipes. 📌 RECIPE CARD Fish Shorba Ingredients: For the Fish: • Fish – ½ kg • Red chilli powder – 1 tsp • Garlic paste – 2 tsp • Carom seeds – ½ tsp • Crushed red chilli – ½ tsp • Salt – 1 tsp For the Gravy: • Onions – 2 • Tomatoes – 4 • Red chilli powder – 2 tsp • Salt – ½ tsp • Turmeric – 1 tsp • Ground coriander – 2 tsp • Cumin seeds – 1 tsp • Fresh coriander – as needed • Green chillies – as needed • Ginger garlic paste – 2 tsp • Oil – ½ cup Method: Marinate the fish with all the ingredients listed for it and leave it overnight. For the gravy, heat oil and fry the onions until golden brown. Add red chilli powder, salt, turmeric, ground coriander, cumin, and ginger garlic paste. Sauté and sprinkle a little water. Add tomatoes along with 2 cups of water, cover, and cook well. When the tomatoes soften, add another 2 cups of water. Once it boils, add the marinated fish and cook for 5 minutes. Turn off the heat and finish with green chillies and fresh coriander. Fried Baingan Masala Ingredients: • Eggplant cubes – ½ kg • Cumin seeds – 1 tbsp • Whole coriander seeds – 1 tsp • Carom seeds – ½ tsp • Dry mango powder – 2 tbsp • Salt – ½ tsp • Red chilli powder – 2 tsp • Whole green chillies (long) – 10 • Lemon juice – 2 tbsp • All spice powder – ½ tsp • Fresh coriander – ½ bunch • Oil – 1 cup • Curry leaves – 10 Method: Heat oil and fry the long green chillies, eggplant cubes, and curry leaves. Remove and set aside. Coarsely crush the cumin seeds, coriander seeds, and ajwain. Now add all the spices to the remaining oil. Add the fried eggplant and mix well so the masala coats it nicely. Add fresh coriander and lemon juice, cover, and steam-cook (dum) for 5 minutes.
