Cinnamon swirl banana cake ♡ Ingredients for the cinnamon swirl: 3/4 cup (150g) coconut sugar 2 tbsp cinnamon 1/2 cup (120g) unsalted butter Ingredients for the cake: 3 cups (360g) plain flour 1 cup (200g) coconut sugar 4 tsp baking powder 1 1/4 cup (300ml) whole milk 2 large eggs 1/2 cup (110g) unsalted butter 3 large mashed bananas Instructions: 1. Preheat your oven to 350°F/180°C. 2. In a small bowl, mix together the coconut sugar, cinnamon, and melted butter. Stir until well combined, then set aside. 3. In a large mixing bowl, whisk together the plain flour, coconut sugar, and baking powder. 4. Add in the beaten eggs and milk, whisk these in gently until smooth. Then pour in the melted butter and stir until smooth. Add the mashed bananas. 5. Line a cake tin with baking paper and pour in your batter. 6. Drop blobs of the cinnamon mixture evenly over the batter, then use a knife to swirl it through evenly. 7. Bake the cake for 40-45 minutes or until the top is golden brown and a toothpick inserted into the cake part comes out with just a few moist crumbs. 8. Let it cool and enjoy! ♡ If you prefer normal sugar you can use light brown sugar instead of coconut sugar ♡ Use ripe bananas, they add natural sweetness ♡ Don’t overbake, the cinnamon swirl will still be wet when it comes out of the oven. Poke s toothpick or fork in the cake and make sure there is no wet batter left. 📝Notes: I prefer to use raw, organic, and grass-fed ingredients whenever possible, as this is important to me and reflects my personal approach to cooking. However, feel free to adjust the recipe according to your own taste and preferences.
