Caesar Salad was invented in Tijuana, Mexico, in the 1920's by an Italian American named Caesar Cardini at his restaurant, Caesar's. Even then it was tossed tableside for customers. Brent had heard that its origin was Italian, Mexican, and even French. He understands the confusion! . Brent learned to make the “tableside” Caesar salad recipe featured in this episode while in his early 20’s as a waiter in a French restaurant in Vail, CO. Later, he moved to Boulder,CO, where he also waited tables for a few years in the formal dining room of a local country club. That establishment had a different tableside Caesar salad recipe when he arrived. It was not as good. He made a Caesar salad for the kitchen his way, and they immediately changed the restaurant's recipe to Brent's version – which is the one shared in this episode. Throughout his life, Brent would order Caesar salad while dining in various restaurants. Some were prepared tableside, but most were not. Regardless, they never were as good as the one that he learned in to make in Vail. The closest was at a restaurant in New Orleans called Emeril’s owned by celebrity chef Emeril Lagasse. In that case (and it was made tableside), they utilized 12 of the 14 ingredients found in Brent's version.
