This episode explains some of the science and history behind fermentation and outlines the benefits of the process. Brett Thomas – founder of a Denver-area, “cottage bakery” called The Sour Dog Bakery – is this episode’s Special Guest. He details why genuine, cultured sourdough bread is considered a fermented product and the health benefits that it provides. He then shares how to make it yourself. If you live in the Boulder/Denver area and you would like to purchase delicious and nutritious sourdough bread, you can reach Brett via his website – https://www.sourdogbakery.net. Email there, and he will respond. You will need to go to Lakewood, CO, for pick up. If ready to make your own healthy sourdough bread, a recipe for a whole wheat, organic version appears below: https://docs.google.com/document/d/1Z.... A flour that Brett suggests using is Central Milling high-protein, organic bread flour. It is difficult to find in smaller amounts though. He recommends this one instead: https://www.amazon.com/dp/B092HXKXLB/.... Brett also blends in organic, 100% whole wheat flour. Again, Central Milling does not offer this in smaller amounts, so this one would be good instead: https://www.amazon.com/dp/B089JFDY1H/.... When growing the Starter, Brett utilizes Central Milling’s Organic All-purpose Flour: https://www.amazon.com/dp/B092HQ88LC/.... If you do not have a sourdough starter, you must make one. Brent and Brett did not create one in this episode. (It would take a separate video on its own to show the preparation of one.) They used one Brett already had. You can learn how to create a sourdough starter from scratch here: https://www.feastingathome.com/sourdo.... The Sour Dog bakery also sells sourdough starters, as do other small bakeries. To make and bake sourdough bread successfully, the following items will help: KitchenAid 5 Quart Tile Head Stand Mixer. https://www.amazon.com/dp/B0769ZQWH7/.... Brent also featured this same mixer in his Award Winning “Hickray” Smoked (Polish) Kielbasa episode. Digital Food Scale. This one allows for measurement in grams and milliliters. It also weighs items up to 33#, allows for tares, and operates on batteries or a Type C charging cable. https://www.amazon.com/dp/B0D7H6TRQL/.... Banneton Bread Proofing Baskets. This set includes 10” round and 10” oval proofing bowls with liners. Round baskets are great for round loaves like boules, while oval baskets are better suited for longer loaves like baguettes. https://www.amazon.com/dp/B0D91ZY3P4/.... Round Cast-iron Bread Pan with Lid (including miscellaneous supplies): https://www.amazon.com/dp/B0DQBR7Y28/.... Oval Cast-iron Bread Pan with Lid: https://www.amazon.com/dp/B0DHS47C92/.... Your preference for a round or oval bread cooking pan is up to you. Enamel-lined Cast-iron Dutch Oven: You may choose to use an enamel-lined, cast-iron Dutch oven instead of a 100%-cast-iron bread pan. Brent owns one that is 7.5-quart. It features in many episodes for things like stew, chili, soup, etc. Enameled cast iron also can be used to make sourdough bread. It is convenient, versatile, easier to clean, and traps steam well. https://www.amazon.com/dp/B0039UU9UE/.... Bread Lame (for scoring the bread). https://www.amazon.com/dp/B01LY7NDQ9/.... A Fermentation Crock with Lid can be used in this process. Brett feels that plastic “proofing” containers with lids work fine too. and they are less expensive. (Make sure you order the correct size!). https://www.amazon.com/dp/B08THH4G1V/.... Bread Sling (Silicone). https://www.amazon.com/dp/B0DYH7LZGQ/.... Bread Cooling Racks. https://www.amazon.com/dp/B0CX596M1Z/.... If you don’t live in the Boulder/Denver area (where you could order from the Sour Dog Bakery), want some real cultured/fermented sourdough bread, and are not ready to bake it yourself, you may need to go to a specialty bakery. Remember, authentic sourdough has only 4 ingredients – starter, flour, water, and salt. Store bought (i.e., mass produced) versions often rely upon commercial yeast for leavening (not fermented starter!) and contain preservatives and other additives. This means that they are not cultured. Are you a Foodie like Brent? If yes, Liking this episode and Subscribing to this Channel helps ensure more content like this. Cheers!
