Bloom yeast: combine warm water + pinch sugar, let it get foamy (5–10 min). Add yeast mix to flour and stir until sticky dough forms. Optional: Rest 30 min & fold up to 3x for extra rise. Cover tightly → rise overnight (12 hrs). Turn dough onto floured surface → divide into 3. Shape each piece into a baguette (fold like a letter → roll into logs). Rest 20–30 minutes while oven heats to 475°F with a metal pan inside. Dust + score tops. Bake: pour boiling water into hot pan (for steam) → bake 15 minutes.
