Today we are in Ischia, near the charming old town of Ischia Ponte, spending the day with 82-year-old Uschi, her husband Vincenzo and her daughter Catherine. Together they run a family B&B called Marcantonio. In this episode, Uschi shares a very special family recipe: her herb and tomato sauce — or as she calls it, “Mountain Sauce.” Made with dozens of fresh herbs gathered by hand, homemade tomato sauce and served with homemade gnocchi. For the herbs, use small handfuls or sprigs of each. Add stronger herbs in moderation, such as bay leaf and mint. For the gnocchi: 1.5kg potatoes Salt – to taste 1 egg 150g all-purpose flour For the sauce: 4–5 tbsp Olive oil 1 whole onion 3 large cloves of garlic 1kg Tomato sauce Salt – to taste Violets Dandelion greens Bay leaf Rosemary Parsley Portulaca (purslane) Zucchini flowers Sage Horseradish leaves Oregano Marjoram Lavender Chili pepper Basil Chives Mint Buon appetito!
