Retired Life Eats, Ep. 2 - the easiest, no-knead sourdough

Sourdough does not "knead" to be hard! In this video I walk you through my method for making healthy, inexpensive no-knead sourdough bread. Here is the recipe I have used for over 20 years. I started out with an old 1945 recipe from Pillsbury and then adapted it from the original recipe by Jim Leahy of the Sullivan Bakery, which was the most popular recipe ever published in the NY Times. To this day hundreds of variations of this recipe are floating around. I adapted it again and this is the version I make now: No Knead Sourdough Bake at 425F *Preheat over to 450F and when you place the bread in there reduce the heat to 425F* 2 bread loaf pans (9" x 5" x 2.75") 400 grams (3 cups) of all purpose flour 1 1/4 to 1 1/2 tsps salt 1/4 tsp yeast (instant), or around 80 to 90 grams of active starter 300 grams (1 1/3 cups) water, room temperature -Combine flour, salt and yeast and mix well -add the water (see note* below) -mix and form a shaggy dough -cover with Saran Wrap and place in warm place for around 6 to 8 hours or do the stretch and fold method if you wish (you do four stretch and fold series in the first two hours of the rising every 30 minutes as shown in the video) -once dough is doubled, flour your surface, scrape the dough on the counter and form into loaf shape as per video -place in bread loaf pan (9" x 5" x 2.75") that has been sprayed with no stick spray -let rise for around 1 1/2 hours until double -cut the top with a few slits as shows in the video -cover with a second loaf pan and bake for 22 minutes in a 425F preheated oven, then take the cover off and bake a further 23 minutes uncovered.
