What I eat in a day on the weekends following the starch solution. Today I am showing you three meals plus a snack that are all great for weight loss. On the weekends I have more time and get to be a little more creative, yet these recipes are all simple and easy to make and all are gluten free too! FULL INGREDIENT LIST AND INSTRUCTIONS PLUS LINKS TO RECIPES I REFER TO IN THIS VIDEO WILL BE IN THIS DESCRIPTION BOX! So here is what you will need to make these recipes #1 Southwest tofu scramble ingredients 1/2 thinly sliced bell pepper 3 thinly sliced mushrooms 1/4 of a thinly sliced onion 2 cups chopped spinach fresh(or any greens you like) 7 ounces or so doesn't have to exact firm or xtra firm tofu black salt to taste (optional) Himalayan pink salt to taste 1/4 tsp each cumin, chili powder, garlic powder, onion powder 1/8 tsp ground turmeric for color water Instructions: preheat non stick skillet over medium heat add 2 T water add peppers, onions and mushrooms and cook for 2-3 minutes add a pinch of salt and more water if needed and cover and cook for two minutes. Next add spinach another pinch of salt and cover and cook for two minutes add more water if needed. Next scoot the veggies over to one side of the pan add another 2 T of water and crumble tofu into the empty side of the pan and cook for 2-3 minutes. Then add spices and mix tofu and veggies together and add water if needed and cook for another 5 minutes stirring fairly frequently. Serve with salsa, hot sauce or BBQ sauce and a side of crispy potatoes. #2 Roasted butternut squash, red onion and lentil salad Ingredients: 1 cup roasted butternut squash ( or any squash you like) in small slices or cubed. 1 red onion thick sliced 1 cup cooked lentils, brown or green Spring mix squeeze of lemon micro greens (optional) For the dressing: 1/2 tsp minced garlic 2 T grainy mustard (or any kind you like) 1-2 T maple syrup 2-3 T red wine vinegar put dressing ingredients into a bowl and whisk, taste and adjust flavors you need to. To roast the veggies, place on a lined baking sheet, season with salt pepper and garlic powder and roast @ 425 degrees for 20 minutes To assemble salad Place spring mix into a large bowl Pour half the dressing over the greens and toss well making sure all greens are coated with dressing. Then add the veggies, lentils and micro greens and squeeze lemon over the top and pour the rest of the dressing over entire bowl. Makes enough for two. #3 Snack Italian onion and tomato crackers 1 T hummus grapes #4 Super fresh burrito bowl ingredients 1 1/2 cups romaine lettuce 1 cup mixture of red, green cabbage and carrots (I use a coleslaw mix) 1/2 cup bell peppers chopped 1/2 cup chopped red onion 1/2 cup chopped cherry tomatoes 1/2 cup chopped cucumbers 1 cup rice (i used half brown and half white) 1/2 cup to 1 cup refried beans plant based cheese sauce salsa #whatieatinaday #weekendmeals #thestarchsolution LINK TO CHEESE SAUCE: • New Plant Based Cheese Sauce with Potato B...
