STRAWBERRY BANANA PANCAKES WITH STRAWBERRY SYRUP Ingredients pancakes 2 cups gluten free oats 1 ripe banana 4 frozen strawberries slightly defrosted 1 T ground flax 1 tsp baking powder 1/2 tsp cinnamon 1/2 tsp vanilla powder or 1 tsp vanilla extract 1 1/2 cups water (more if you want batter thinner) Instructions; Place all ingredients into a high speed blender blend till smooth Pour on to a preheated griddle ( set @ 350 degrees) or skillet Cook till bubbles form and edges appear dry then flip and cook another minute or two. Makes 11-14 pancakes, depending on the size. Ingredients for strawberry syrup 1 cup frozen strawberries thawed 1 T maple syrup Instructions Using a fork mash the strawberries down and add strawberries and any liquid that may have accumulated into a saucepan and add maple syrup. Bring to a boil then let simmer for 5 minutes until it cooks down a bit and thickens. Pour over pancakes. INSTANT POT SLOPPY JOES 1/2 onion chopped 1 green bell pepper chopped 1 large can tomato puree 1 tsp garlic 2 T apple cider vinegar 2 T vegan Worcestershire sauce 1 T maple syrup 1 cup dry brown or green lentils 1/4 cup red lentils 2 cups water 1 tsp oregano 1 tsp smoked paprika 1 tsp chili powder salt to taste set instant pot to saute setting. Using water or veggie broth saute the onions, garlic and peppers till soft. turn instant pot off. Add all the other ingredients stir to combine. set instant pot on manual for 13 minutes. let natural release on its own for ten minutes then quick release. Serve over rice or potatoes or on a bun with a side of green veggies. CREAMY LEMON MUSHROOM CHICKPEA STROGONOFF Ingredients: 1 8 oz. packages of mushrooms sliced ( I used Cremini) 1/2 cup chopped onion 1 T minced garlic 1 tsp thyme juice of 1/2 lemon 1 cup unsweetened plant milk 1 cup veggie broth 2 T nutritional yeast 1/4 cup instant potato flakes or 3 T flour 1 can garbanzo beans rinsed and drained 1 cup frozen chopped spinach salt to taste Instructions: In a non-stick skillet on medium heat add couple tsp of water and mushrooms, saute until mushrooms release moisture and reduce by half, then add onions and garlic and saute till onions are soft. Add plant milk, veggie broth, nutritional yeast, thyme, lemon juice, potato flakes ( or flour) and stir well, bring to a boil and then reduce heat to simmer for 5 minutes, then add chickpeas and spinach and simmer another 5 minutes or so until spinach is heated through.
