This week I wanted to do something a little different. Given everything that’s going on in our world, I’ve been feeling a little anxious and stressed. When I feel like that I always find spending time in the kitchen, cooking and baking, to be helpful in calming me down. So, I thought I would share my favourite bread recipe with you. Its super simple with only 6 ingredients if you count water. It’s also really quick, something that you can do in between 1 & 1/2 and 2 hours. It’s a great base recipe that you can add on to. I’ve used it to make cinnamon swirl bread and focaccia. My Favourite Bread Recipe: Ingredients: 1 1/2 cups warm water 1 Tbsp sweetener such as agave or maple syrup 2 1/4 Tsp quick rise dry yeast 2 Tbsp light tasting oil (I use olive) 4 Cups white flour (if using whole wheat, see note below about cooking times) 1 1/2 Tsp salt In mixing bowl or bowl of stand mixer if using, mix water, yeast and sweetener. stir and let stand until yeast is foamy, about 3 p 5 minutes. Add in oil & salt and mix Add flour, a little at a time until all incorporated. If using stand mixer with a dough hook, knead for 10 minutes on medium. If kneading by hand, dump the dough onto a lightly floured surface and knead by hand for 10 minutes. After 10 minutes, place (or keep if using stand mixer) the dough in a bowl and cover with a damp tea towel. Place in warm location for 30 minutes. After 30 minutes, take the dough out of the bowl onto a lightly floured surface and knead for a minute or so. Line the bowl with parchment paper and place the dough back in the bowl and cover again with the damp towel and let rise again for 30 minutes in a warm spot. 10 minutes before the second rise is done, preheat your oven to 400 degrees F and place the cast iron dutch oven into the preheating oven with the lid on. Once the second 30 minute rise is done, pull the preheated dutch oven out of the oven, and remove the lid. BE CAREFUL, THE LID IS HOT SO DON’T FORGET TO USE AN OVEN MIT TO REMOVE THE LID! (I’ve learned this lesson the hard way). Using the parchment paper lift the dough out of the bowl, place into the dutch oven and replace the lid. (Being careful not to touch the sides of the pot and lid which are very hot) Place the covered dutch oven into the oven and bake for 30 minutes. If you are using whole wheat flour the cooking time will be closer to 45 or 50 minutes but check it at 30. Remove the lid for the last 10 minutes so you get a nice crust on the loaf.
