In this video, I will be showing you the easiest salad recipe without lettuce or leafy greens for those that are looking for a easy, healthy salad option without feeling like a rabbit. :) You only need 3 ingredients for the salad and 3 ingredients for the dressing, and guess what? They're all ingredients that are versatile and can be used for other recipes easily! Recipe: 1 English cucumber 4 small tomatoes 1/4 red onion Dressing: 1/4 cup olive oil 1/4 cup lemon juice Salt to taste Instructions: 1. Finely chop cucumber, tomatoes and red onion, and mix together. Tip: remove the seedy juicy parts of the tomatoes if you're looking to store for a couple days. 2. Mix olive oil, lemon juice and salt in a mason jar. 3. Toss veggies with dressing right before eating. That's it! So easy, simple and delicious!
