This is my first time baking Basque Cheesecake. The flavour is good but it is no way near perfect..unfortunatelly.. I watched many youtube creators make the cake, it looks very simple. However, when I tried it myself, I found this 'simple cheesecake' really require attention to details to make it right. If I make it again, I would spend more time to mix all the ingredients thoroughly and remember to place the baking tray in the upper position of the oven to colour the cake top fast without over baking the cake to achieve gooey centre and even browning on the top of the cake. If you would like to try out this recipe or any other Basque cheesecake recipe, make sure learn from my mistakes :) mix the batter well and place the cake in the oven in the right position. Recipe: 260g cream cheese 60g mascarpone cheese 60g sugar 2 large whole eggs 1 extra egg york 165g whipping cream 10g corn starch Bake at 230 degree for 22 minutes.
