Well this is one of those surprising "something-out-of-nothing" recipes that actually passed muster. Aside from it falling a bit due to my frigid house, it was delightfully moist and not so dense you could injure yourself if you dropped it on your foot. I am pleased to say that I am keeping this one around - and plan on tweaking it a bit - heck with oil prices the way they are, I am FINE to not have to use any fats in this bread. Although after I made this a lovely viewer told me that when they do oat bread, they double the yeast, soooo... next time I try this I am going to see how that works out.
