In today’s video, I am sharing an authentic Andhra village-style Chintakaya Roti Pachadi made using fresh raw tamarind. This traditional stone-ground chutney is simple, rustic, and packed with bold flavors. The combination of roasted fenugreek seeds, coriander seeds, sesame seeds, green chilies, curry leaves, and sautéed raw tamarind creates an unforgettable taste. First, fresh raw tamarind is washed, chopped, and deseeded. Then fenugreek seeds, coriander seeds, and sesame seeds are dry roasted until golden and aromatic. Green chilies and curry leaves are lightly sautéed in oil. Raw tamarind is cooked with tomatoes and turmeric until soft. All ingredients are cooled and ground in a traditional stone mortar (roti) with salt, garlic, and cumin seeds to get a coarse, rustic texture. Finally, a tempering of mustard seeds, chana dal, and curry leaves is added to enhance the flavor. This chutney tastes amazing when mixed with hot steamed rice and served with raw onion slices.
