Directions: Preheat your oven to 275 degrees. While you allow your steak to come up to room temperature, season generously with your preferred seasoning. Place your steak on a wire rack and into the oven for 45-60 minutes or until the internal temperature registers 115 degrees (for my medium rare folks). Next, get your skillet screaming hot and add a high smoke point cooking oil. Lay the steak away from you and press down firmly. Sear for 60-90 seconds (until a nice crust is formed). Flip the steak and add butter, herbs, and garlic. Baste thoroughly and remove the steak from the heat at around 130 degrees (for med-rare). Your steak will continue to rise in internal temperature by about 5 degrees during the resting period. Allow your steak to rest for about 8 minutes prior to slicing. Steak Doneness Guide: Rare : 125-130 degrees F Medium-Rare: 130-140 degrees F Medium:140-150 degrees F Medium-Well: 150-155 degrees F Well-Done: Stop burning your steak!
