Garlic powder half tsp Oil 50 gram Carrot 1 Zucchini 1 Onion 1 Brinjal 1 Green capsicum 1 Ingredients for Rice: Rice ½ kg Water as required Ingredients for spice Cumin powder 1tsp Red chili flakes half tsp Paprika 1tsp Turmeric 1tbsp Chicken cube 1 Bay leave 1 Salt ¼ tsp Oil 30 grams Capsicum 1 cubed cashews Method: Baked/ cooked the chicken with peri peri sauce and garlic powder separately first. Add oil in a pan separately then capsicum, zucchini onion, brinjal and carrot. Cook it well for 5-6 minutes. Add the cooked chicken in the vegetables. For rice: Add water in a pot. Put all rice spices and mix it well to remove the lumps. Add oil. Put it on flame to boil. When comes to boil then add soaked rice with medium flame. When very small quantity of water is left then add the cubes capsicum. Garnish it with cashews. Chicken With Peri Peri Rice: Ingredients to marinate : Chicken boneless thigh 250grams Peri peri sauce 1 ½ tbsp Lemon powder ¼ tsp Paprika 1tsp Chicken powder 1tsp Oil – 2tbsp Green bell pepper – 1 Yellow bell pepper - 1 Ingredients for Rice: Water – as required Rice – half kg Ingredients for spice Cumin powder 1tsp Red chili flakes half tsp Paprika 1tsp Turmeric 1tbsp Chicken stock cube 1 Bay leave 1 Salt ¼ tsp Oil ¼ cup Capsicum 1 cubed Method: Marinate the chicken with peri peri sauce, lemon powder, paprika, chicken powder and oil. Bake/ cook/ grill the marinated chicken. Put the baked chicken with bell peppers on the skewer and grill it very well. Put the additional sauce on the skewers if you desire. For rice: Add water in a pot. Put all rice spices and mix it well to remove the lumps. Add oil. Put it on flame to boil. When comes to boil then add soaked rice with medium flame. When very small quantity of water is left then add the cubes capsicum. Peach Margarita: Ingredients: Peach puree 1 cup Powdered sugar 2-3tbsp Orange juice 1 can White soft drink 1 bottle Lemon juice 1 lemon Crushed ice 1cup Method: Blend all the ingredient well. Garnish it with peach and lemon mint. Peri Chicken Skewers: Ingredients: Chicken - 250 grams Peri peri sauce 2 tbsp Oil 1tbsp Cayenne powder ½ tsp Salt as required Chicken powder ½ tsp Pineapples cubes Ingredients for dip: Mayonnaise half cup Yogurt half cup Peri peri sauce 1tsp Ingredients for Salsa: Tomato 1 chopped Onion – 1 chopped Cucumber - 1 chopped Parsley as required Olive oil 3 to 4tbs Black pepper ¼ tsp Sugar ¼ tsp Paprika powder ¼ tsp Lemon juice half tsp Method: Marinate the chicken cubes with peri peri sauce, oil, cayenne powder, salt and chicken powder. Put it on skewers with pineapples. Grill it. Mix all the ingredients of dip well. For salsa: mix olive oil, lemon juice, black pepper, sugar. Paprika powder and parsley very well and then drizzle it on the toasted vegetables. Serve the grilled chicken skewers with grilled pita bread, salsa and dip.
