How to Roast Coffee: Temperature & Time. As a new coffee roaster or someone looking to start out as a specialty coffee roastery, you may have read that temperature and time impact the cup profile of your roasted coffee. This video explores how temperature and time in the roasting drum effect how coffee tastes. I show three batches of a washed coffee from Uganda roasted in three different ways. Two with the same end temperature but different roast times. One with the same overall roast length but a higher end temperature than the control. I then analyse the result for the coffee’s dry fragrance, aroma and flavour. From this, I draw conclusions on what end temperature and total roast time have on these components and suggest which I prefer. This video is aimed as a guide and therefore is descriptive, not prescriptive. The notion is to give you an understanding of possible outcomes so you can explore roasting with more clarity.
