Today he makes small American-style pancakes using one of those instant porridge pots that prove extremely useful when you're staying in a hotel and you don't want to fork out for an over-priced breakfast. You could even cook these on an upturned hotel iron. You shouldn't, but you could. INGREDIENTS: 1 Instant Porridge Pot 1 small egg a splash of Evaporated Milk A pinch of Bicarbonate of Soda Butter Syrup (Golden or Maple, or Honey) METHOD: Beat the egg into the oats before adding milk until you have the consistency of double (heavy) cream. Add a pinch of bicarbonate of soda. Butter a pan set over a medium heat (or a hotel iron set to cottons) and spoon on the mixture until about the diameter of a minidisc. Leave until bubbles appear, then flip and cook the other side.
