Ingredients for 4 serving: Flank Steak: 35 oz (1 kg) Apple: 1 Shiitake Mushrooms: 3 oz (85 g) Black Olives: 1 oz (28 g) Yellow Onion: 1 (approximately 150 g) Garlic: 2 cloves Spinach: 1 bunch Mint: 1/2 bunch Tarragon: 1/2 bunch Bread Crumbs: 1/4 cup (approximately 30 g) Goat Cheese: 2 oz (57 g) Red Bell Pepper: 1 Golden Raisins: 1.5 oz (43 g) Butter: 1 oz (28 g) Soy Sauce: 10 ml Red Wine: 50 ml Brown Sugar: 2 tbsp Recipe: 1. Preheat your oven to 375°F (190°C). 2. chop the apple, shiitake mushrooms, black olives, yellow onion, garlic, spinach, mint, and tarragon. 3. Preheat your oven's broiler. Place the red bell pepper on a baking sheet and roast under the broiler, 4. turning occasionally, until the skin is charred and blistered, about 10-15 minutes. 5. Remove the pepper from the oven and place it in a bowl. Cover the bowl with plastic wrap and let it steam for about 10 minutes. This will make it easier to peel off the skin. 6. Once cooled, peel off the skin and chop the roasted red bell pepper into small pieces. 7. In a skillet, melt the butter over medium heat. Add the chopped ingredients and cook until softened. 8. Add Chopped mint and tarragon and golden raisins. 9. Remove from the heat and add goat cheese and bread crumbs. let aside. 10. Lay each flank steak flat on a cutting board. 11. With a sharp knife, make a deep cut along the length of each steak, creating a pocket for the stuffing. 12. Heat a skillet over high heat. Sear the outside of each steak for a few minutes on each side until browned. Remove from heat. 13. Using the cut made earlier, open up each steak and flip them then fill the pockets with the prepared stuffing mixture. 14. Use wooden skewers or toothpicks to secure the steaks closed, ensuring the stuffing doesn't spill out. 15. Place the stuffed flank steaks in a baking dish. 16. Bake in the preheated oven for about 25-30 minutes, or until the steak is cooked to your desired level of doneness and the stuffing is heated through. 17. In a small saucepan, combine the red wine, soy sauce, brown sugar and any remaining tarragon leaves. 18. Simmer over medium heat until the liquid is reduced by half. 19. Whisk in the remaining butter until melted and the sauce is smooth. Season with salt and black pepper to taste. 20. Remove the stuffed flank steaks from the oven and let them rest for a few minutes. 21. Slice the steaks into thick pieces and serve with the tarragon wine sauce drizzled on top. 22.
