Watch how Cooking Bible brings you a new method of cooking chicken in the Oven served with rice and veggies plus a delicious Tangy Garlicky Sauce! Ingredients: Chicken Thighs: 425 g (15 oz) Green Peas: 1/2 cup Sweet Corn: 1/2 cup Rice: 300 g (1.5 cups) Greek Yogurt: 240 g (1 cup) Lemon: 1 Garlic: 3 cloves Hoisin Sauce: 30 ml (2 tbsp) Soy Sauce: 30 ml (1 oz) Sweet Chili Sauce: 45 ml (1.5 oz) Mustard Sauce: 15 ml (1 tbsp) Butter: 15 g (1 tbsp) Dill: 1 bunch Smokey Paprika: 5 g (1 tsp) Chicken Spice: 5 g (1 tsp) Garlic Powder: 5 g (1 tsp) Onion Powder: 5 g (1 tsp) Cumin Powder: 5 g (1 tsp) Salt & Black Pepper: 5 g (1 tsp) Instructions: 1. Preheat the oven to 400°F (200°C). 2. Using a deboning knife, carefully remove the bones from the chicken thighs and shape them into lollipops. 3. In a bowl, combine the smokey paprika, chicken spice, garlic powder, onion powder, cumin powder, mustard and poison sauce, salt, and black pepper. Mix well. 4. Rub the spice mixture over the chicken thighs, ensuring they are evenly coated. Let them marinate for at least 30 minutes. 5. Rinse the rice under cold water until the water runs clear. 6. In a pot, combine the rice with water (follow the package instructions for the water-to-rice ratio). 7. Add the green peas, sweet corn, Diced carrots and butter to the rice. 8. Cook the rice according to the package instructions until fluffy and tender. 9. Place a rack over a baking tray. 10. Arrange the marinated chicken thigh lollipops upside down on the rack. 11. Bake in the preheated oven for about 25-30 minutes or until the chicken is cooked through and golden brown. 12. n a small bowl, combine the Greek yogurt with minced garlic, fine diced celery, lemon juice, and chopped dill. Mix well to combine. Adjust seasoning with salt and pepper to taste. 13. In a mixing bowl, combine the hoisin sauce, soy sauce, sweet chili sauce, and mustard sauce. 14. Once the chicken lollipops are cooked, remove them from the oven and immediately toss them in the sauce mixture until well coated. 15. Serve the upside-down oven-baked chicken thigh lollipops with the tangy garlicky sauce alongside the jewelry rice. 16. Garnish with fresh dill and lemon wedges if desired. 17.
