Turkey Chili 4 servings *from the Optavia app 1 Leaner, 1 Healthy Fat, 3 Greens, 3 Condiments 1.5 lbs. 95-97% lean ground turkey 1 large bell pepper, chopped (any color) 1 jalapeno, small dice 2 green onions, diced (green and white separated) 2 cloves garlic (or 2 tsp. minced) 1/4 t. salt 1 tsp oil 28 oz. fire roasted diced tomatoes 2 tsp. chili powder 2 tsp. cumin 4 oz. avocado 2 oz. reduced-fat, shredded cheddar cheese Heat oil to medium in a stock pot. Add white part of green onion, green pepper, jalapeño and salt. Cook for 2-3 minutes until tender. Add garlic and continue to cook for another minute. Add ground turkey, breaking it up as it cooks. Once that is thoroughly cooked add in the cumin and chili powder for 2-3 minutes. Add in the tomatoes and combine. Partially cover and reduce heat to low. Allow to simmer for at least 20 minutes. The longer, the better! Divide into 4 servings. Top each serving with 1/2 oz. shredded cheese, 1/4 of the green onions, and 1 oz. sliced avocado. Enjoy! How can I help or encourage you?
