Pro tip: Make a double batch and freeze for later. Ingredients: 2–3 ribs celery, chopped (plus leaves if you have them) 1 medium yellow onion, chopped 1 small green bell pepper, chopped 2-4 garlic cloves, chopped 2 cans (6 oz each) tomato paste 1 can (28 oz) crushed tomatoes (Cento brand preferred) 2 tablespoons olive oil Herbs & Seasonings: Several fresh basil leaves Oregano (about 1.5–2 tablespoons) Salt & pepper, to taste Fresh thyme (5 sprigs) Fresh rosemary (2 sprigs, optional) Optional Add-Ins: Italian sausage Cooked meatballs Instructions: ❤️Chop onion and pulse in a food processor until desired consistency. ❤️Heat a large pot over medium heat. Add enough olive oil to coat the bottom. ❤️Add onions and bell peppers. Sauté, stirring occasionally, until softened. ❤️Reduce heat slightly (medium-low) and continue stirring to avoid browning. ❤️Finely chop celery (including leaves) and add to the pot. ❤️Add tomato paste directly to the exposed pan surface and cook it slowly combined with veggie mixture. ❤️Stir everything together and let simmer briefly. ❤️Pour in crushed tomatoes. Refill the tomato cans with water and add to the pot. Stir from the bottom using a wooden spoon. ❤️Add fresh basil, garlic, thyme, rosemary. Add salt and pepper to taste. ❤️If using, add sausage or meatballs at this stage. ❤️Simmer on medium-low heat until sauce thickens. (60 minutes). Taste and adjust seasoning as needed. Enjoy 🤍
