Subscribe for more! #PineappleUpsideDownCake #EasyBaking #CupcakeRecipe #DessertIdeas #SweetTreats Ingredients: For the Cake • 1 box white cake mix • ½ cup (1 stick) (113g) unsalted butter, melted • 1 cup (237ml) pineapple juice • 3 whole eggs • 1 egg yolk For the Topping • 4 Tbs (43g) melted butter • ½ cup (110g) brown sugar • 12 maraschino cherries • ¾ cup (175g) crushed pineapple, drained (reserve juice) Directions: 1. Preheat oven to 350°F (175°C). 2. Spray muffin tins generously with nonstick spray. 3. In a large bowl, mix together the cake mix, melted butter, pineapple juice, eggs, and egg yolk. Beat for 2 to 2½ minutes until smooth. Set aside. 4. Make sure the crushed pineapple is well drained and the juice is reserved if needed. 5. Add 1 teaspoon melted butter to each cupcake cavity. 6. Sprinkle 2 teaspoons (6g) brown sugar into each. 7. Place 1 maraschino cherry in each cup. 8. Add 1 tablespoon drained crushed pineapple over the cherry. 9. Fill each cup with cake batter, almost to the top. 10. Bake for 19–20 minutes, or until a toothpick inserted into the cake comes out clean. 11. Cool briefly, then carefully invert cupcakes onto a tray or parchment-lined surface.
