Perfect for meal prep or a quick weeknight dinner. #WhiteChickenChili #EasyRecipes #HealthyDinner #CarrollShelby #chili Ingredients: • 2 Tbs (27g) olive oil or oil of choice • 2 small Spanish yellow onion , chopped (about ½ cup) • 4 garlic cloves , finely minced (or 1 ½ tsp (4.5g) garlic powder) • 4 to 5 cups (950-1200ml) chicken broth or stock • 8 oz (230g) cans diced green chilies • 1 Tbs (6g) ground cumin • 0.5 tsp (1g) cayenne pepper • 1 tsp (1g) Mexican dried oregano • 1 tsp (2g) paprika • Salt and freshly ground black pepper to taste • 48oz (1350g) great northern beans cooked • 2 cup (350g) corn (frozen or canned drained) • 4 cups (450g) cooked or one rotisserie chicken, shredded – Your choice of cut • 1 Cup (240g) sour cream, optional Directions: 1. Heat oil in a large (5-6 quart) pot over high heat. Add onion and sauté until softened, 3-5 minutes. Add garlic and cook for about 1 minute. 2. Add cumin, oregano, paprika, and cayenne pepper. Add broth and season with salt and pepper to taste. 3. Add beans and corn to the soup pot. Bring the mixture to a simmer and add chicken cook, uncovered, for 15 to 30 minutes. 4. Remove from heat and stir in sour cream if desired. 5. Serve garnished with cilantro, shredded cheese, avocado slices, cilantro and fresh green onions, and tortilla chips if desired. Add a squeeze of lime at the end!
