This Isn’t Just Mac and Cheese, It’s Lobster Mac and Cheese. ______________________________________ INGREDIENTS 1 lobster 400g pasta (e.g., macaroni or your choice) 1 tbsp olive oil For the Cheese Sauce: 2 tbsp olive oil 1 shallot, finely minced 2 cloves of garlic, grated 1 tsp saffron (optional) ¼ tsp cayenne pepper ¼ tsp smoked paprika 100g unsalted butter (https://allthingsbutter.co.uk/) 100g all-purpose flour 1L milk (add gradually) 1 tsp Dijon mustard Salt and black pepper (to taste) Cheese (grated, about 300g total): Compté Gruyère Mozzarella Parmesan Cheddar For the Toppings: ½ cup panko breadcrumbs 1 tbsp butter (for toasting breadcrumbs) 200g cherry tomatoes Salt (for tomatoes) Chives (finely chopped, for garnish) ______________________________________ INSTRUCTIONS Step 1: Preparing the Lobster 1. Cut the lobster through the head first, then separate the body and claws. 2. Bring a large pot of water to a boil. 3. Cook the claws for 3 minutes. 4. Add the body and cook for another 3 minutes. 5. Insert a spoon into the tail to keep it straight while boiling. 6. Once cooked, transfer all parts of the lobster to cold water to stop the cooking process. 7. Step 2: Extracting the Lobster Meat 8. Crack open the lobster claws and body gently to remove the meat. 9. Reserve the lobster head contents for additional flavour, if desired. Step 3: Cooking the Pasta 1. Cook the pasta in boiling water until slightly undercooked (al dente). 2. Drain the pasta and mix in a bit of olive oil to prevent sticking. Step 4: Preparing the Cheese Sauce 1. Heat 2 tbsp olive oil in a pan over medium heat. Add the minced shallot and sauté until soft. 2. Add the grated garlic and cook briefly until fragrant. 3. Stir in the saffron, cayenne pepper, and smoked paprika. 4. Add 100g butter and let it melt. Then stir in the flour and cook for 1–2 minutes to form a roux. 5. Gradually whisk in the milk, about 1 cup at a time, ensuring the mixture stays smooth. 6. Once all the milk is incorporated and the sauce thickens, add the grated cheeses and stir until melted. 7. Season with salt, black pepper, and Dijon mustard. Step 5: Assembling and Baking 1. Combine the pasta with the cheese sauce. Mix thoroughly. 2. Transfer the mixture to an oven-safe dish. 3. Place under the grill (broiler) until the top is golden and bubbly. Step 6: Preparing the Toppings & Serving 1. In a pan, melt 1 tbsp butter and add the panko breadcrumbs. Toast until golden brown. 2.
