Soft, flavorful, and incredibly satisfying, they remind me of the little pizzas I used to eat at school — something between a bun and a pizza, but made without flour and with very low carbs. They’re easy to make, perfect for family meals, and great if you’re following a low-carb or keto lifestyle but still want real, cozy food 🍕 📌 Ingredients For the dough: 3 eggs 3 Tbsp milk (45 ml, almond or regular) 1 Tbsp olive oil (15 ml) 3 Tbsp coconut flour (30 g) fresh dill, finely chopped For the sauce: 1 Tbsp lemon juice (15 ml) 1½ Tbsp tomato paste (≈30 g) 1½ Tbsp cream cheese (≈22 g) 1 Tbsp olive oil (15 ml) salt & black pepper to taste For toppings: 100 g ham (turkey, chicken, or beef — sugar-free) ½ bell pepper, diced ½ shallot, sliced olives, halved 1/2 cup shredded cheese (50g) fresh herbs for garnish 🍕 Macros per 1 mini pizza (1 of 6): 188 kcal · 11 g protein · 14 g fat · 4.5 g net carbs 👩🍳 Method: Whisk eggs with milk, olive oil, coconut flour, and chopped dill until thick. Spoon the dough onto parchment to form 6 small pizza bases and bake for 7 minutes at 180°C (356°F). Mix all sauce ingredients until smooth. Top the baked bases with sauce, ham, vegetables, and cheese.
