Born in Puglia, in the south of Italy, as a way to reuse mozzarella scraps, burrata has become a full-blown global sensation. Over the last decade, searches for “burrata” have jumped nearly 900%. But unlike aged cheeses, which can last for months, burrata was never meant to travel. To get it into shops around the world, producers in Italy have made big changes: pasteurizing the milk, adding acidity regulators, and flooding it with cream to cover it all up. The result?
