It started with a sweet gift, the last basket of apples from our kind neighbor 🍏. I turned them into a comforting caramel-drizzled upside-down apple cake, a pot of homemade apple tea, and a golden apple jelly that captures the warmth of autumn. For our dog Hilma 🐾, I baked some apple-carrot cookies, and for lunch, I prepared baked chicken with mango-avocado salad and potatoes 🥔🥭🥑. Simple, colorful, and delicious. To finish the day, I began making homemade apple cider vinegar, preserving the goodness of the season for winter days ahead. 🍯🍂 Thank you so much for being here🌸💛 Sending a lot of hugs....💛 🍎Upside-Down Apple Cake 📌 Ingredients:📌 For the Caramel Apple Layer:📌🍯 500g apples (peeled, cored & sliced) 60g butter 100g brown sugar 1 tsp cinnamon Pinch of salt For the Cake Batter:📌 190g All-purpose flour 1 tsp baking powder 1/2 tsp baking soda 1 tsp cinnamon 1/4 tsp cardamom or nutmeg (optional) 1/4 tsp salt 115g soft butter 100g white sugar 100g brown sugar 2 eggs 1 tsp vanilla extract 120g greek yogurt or sour cream 60 ml milk Instructions:📌 1️⃣ Caramel Apple Layer📌 Melt butter in a pan. Stir in brown sugar until smooth. Add apple slices, cinnamon & salt. Cook for 5 minutes, then pour into a greased 9-inch cake pan 2️⃣Cake Batter📌 Whisk together the dry ingredients (flour, baking powder, baking soda, spices, and salt). Cream butter + sugars. Add eggs & vanilla extract. Gently mix in dry ingredients alternately with yogurt & milk. Pour batter over apples. 3️⃣ Bake📌 Bake at 175°C for 35–40 min. Cool for 10 min, flip onto a serving plate. Served with drizzled caramel sauce. It's tea time! Happy Baking!💛💛💛 Simple Caramel Sauce🍯 📌 Ingredients📌 200g White sugar 90g Butter (unsalted) 120 ml Heavy cream (33–36%) 1/2 tsp Salt (optional, for salted caramel) 🔥 Instructions📌 1️⃣ Melt the Sugar📌 In a heavy saucepan, heat sugar over medium heat. Stir continuously with a heatproof spoon or whisk. Sugar will clump, then melt into an amber liquid. Be patient. 2️⃣ Add Butter📌 Once sugar is melted and golden, carefully add the butter. Stir until fully melted and combined. 3️⃣ Add Cream📌 Slowly pour in heavy cream (it will bubble strongly). Stir until smooth and creamy. 4️⃣ Finish📌 Remove from heat. Stir in ½ tsp salt if you want salted caramel. Let it cool slightly; it thickens as it cools. 🧊 Storage📌 Store in a jar in the fridge for up to 2 weeks. Warm gently before using. 🍎 Homemade Apple Cider Vinegar📌 🧾 Ingredients📌 Apple scraps (peels & cores) from 4–5 apples 2 tbsp sugar or honey 1 liter (1000 ml) filtered water (room temperature) A clean glass jar Cheesecloth or clean cloth + rubber band ⚗️ Instructions📌 1️⃣ Prepare the Jar📌 Fill a clean glass jar ¾ full with apple scraps. Mix 2 tbsp sugar into 1 liter of water until dissolved. Pour the sugar water over the apples until fully covered. Leave some space at the top (for bubbling). 2️⃣ Cover & Ferment📌 Cover the jar with a cloth (not a lid) and secure it with a rubber band. Place in a dark, warm place (room temp) for 3–4 weeks. Stir gently every 2–3 days to avoid mold. 3️⃣ Strain📌 After 3–4 weeks, when it smells like alcohol/cider, strain out the apples. Transfer the liquid back into the jar. 4️⃣ Second Fermentation (to Turn into Vinegar)📌 Cover again with cloth. Let it sit for 3–4 more weeks, until it smells sharp and vinegary. Taste test, once tangy, it’s ready. 🧊 Storage📌 Transfer to a bottle with a lid. Store at room temperature or fridge. It can last up to 1 year.
