Three tips to make soft crust sourdough: • Increase hydration to 80% • Add unsalted soft butter approx. 10% • Shorter open bake time (10 mins) Full recipe as follow: 【Ingredients】 • 250g Bread flour • 200g Water - (80%) • 50g starter - (20%) • 5g salt – (2%) • 25g unsalted butter – (10%) 【Directions】 1. Combine bread flour and water and mix well. 2. Cover with cling wrap and rest for 1 hour. This process is called autolyse. 3. Mix starter to the dough. 4. Stretch and fold few times. 5. Rest for 30 mins. 6. Add salt water and do second stretch and fold - 4 corners of the dough 7. Rest for 30 mins 8. Add soft butter and third stretch and fold 9. Rest for 30 mins 10. Final stretch and fold or coil fold. 11. Proof until double its size – at least 2 hours 12. Pre-shape the dough and rest for 5 mins 13. Final shape and place the dough inside a dusted benetton basket 14. Cover the basket with cloth and keep in fridge for 12-18 hours 15. Next day preheat the oven at 250℃ with a pot for 30 mins 16. Take out the dough from fridge 17. Score it and spray some water on the dough 18. Place inside the pot immediately 19. Bake for 25 mins inside the pot with lid on and 15mins open bake 20. Place it on a wire rack for cooling.
