In a bowl, combine the pancake mix, baking powder, salt, nutmeg, cinnamon, and Lakanto sweetener. In another bowl, combine almond milk, vanilla extract, and applesauce. Combine wet ingredients into dry ingredients until mixed well. Shred carrots and fold into batter. Pour mixture into prepared baking pan and bake in 350-degree oven for 30 minutes. Let cool and cut into 12 pieces (2 pieces per serving). Enjoy!
