Focaccia di Recco, also known as focaccia col formaggio, is like no other focaccia you've ever had! Inside this golden, crispy flatbread hides the most delicious melted stracchino cheese! This focaccia originates from Liguria, and as a protected recipe, there are some specific ingredients required to make this focaccia di recco as authentic as possible. Although, to be truly authentic, you need to make it in Recco! However, I've included some of my favourite substitutions that are much easier to find! (400 grams) tipo 00 flour or a strong bread flour 2 3/4 tbsp. (40 ml) extra virgin olive oil 1 1/2 tsp. (10 grams) salt 8.5 oz, just over 1 cup (250 ml) water, at room temperature 8.8 oz.
