Please subscribe: / @sugariscooking ********************************************************* Imagine you are in my kitchen: Today we are baking, Sourdough Focaccia with Sea Salt In this video, I’m making an easy sourdough focaccia with a soft, airy crumb and a crispy golden crust. This beginner friendly recipe uses simple ingredients and slow fermentation for amazing flavor. Perfect for sandwiches, dipping in olive oil, or enjoying fresh at home. Ingredients Dough: Water: 315gr (1⅓ cups), lukewarm (25–30 °C / 77–86 °F) Active sourdough starter: 80gr (≈⅓ cup) Bread flour: 350gr (about 2¾ cups) Salt: 10g (≈1½ tsp) Extra virgin olive oil for the pan and topping • Optional: flaky salt or your favorite topping Method 1️⃣ Mix the dough In a bowl, mix the water and active sourdough starter until dissolved. Add the flour and salt and mix until no dry flour remains. The dough will be soft and sticky. Cover and let rest for 30 minutes. 2️⃣ Stretch and folds Perform 3–4 sets of gentrly coil folds / slap and fold, every 30 minutes. The dough will become smoother and stronger after each fold. 3️⃣ Bulk fermentation Cover the dough and let it rise at room temperature until puffy and airy. This usually takes 4–6 hours, depending on temperature. 4️⃣ Transfer to the pan Generously oil a baking pan with olive oil. Transfer the dough to the pan and gently stretch it to fit. Cover and let it proof overnight in the refrigerator 5️⃣ Dimple and top Next day let the dough rise at room temperature for about 4-5 hours until very light and bubbly. Drizzle olive oil over the dough. Use your fingers to gently dimple the surface. Add flaky salt and your favorite toppings. 6️⃣ Bake Bake in a preheated oven at 220°C / 425°F for 20–25 minutes, until golden brown. 7️⃣ Cool and enjoy Let the focaccia cool slightly before slicing.
