This moist, spicy and tender Gingerbread Loaf Cake is so delicious that you’ll cook it over and over again. It’s really quick and easy to make and your house will smell amazing! Serve it warm with ice cream, butter or salted caramel. Ingredients: 180g/ 1 ½ cup all-purpose flour + 3 tbsp cornstarch/corn flour 60g/ ½ cup all-purpose flour 80ml/ ⅓ cup very warm water 80ml/ ⅓ cup molasses 1 tsp baking soda 2 ½ tsp ground ginger 1 ½ tsp ground cinnamon 1 tsp ground cloves ½ tsp ground nutmeg ¼ tsp salt 135g/ ⅔ cup brown sugar zest of one orange/lemon 118ml/ ½ cup olive oil (or other neutral oil) 1 large egg, room temperature 1 tsp vanilla extract 118ml/ ½ cup buttermilk, room temperature Tin size: 27cmx11cm Bake in the oven 180C/350F for 45-50 min. Cool in the tin for about 10-15 min then transfer to a rack to cool completely. Enjoy!
