Whether you're planning a special occasion or just want to treat yourself, this smoked salmon candy will be a hit! *What You'll Learn:* The essential ingredients and their measurements A foolproof method to prepare and cure your salmon Tips for achieving the perfect smoky flavor *Recipe (per KG of cubed fish):* *Cure:* 21g of pickling, sea, or kosher salt (non-iodized) 84g demerara sugar 6g coarse ground black pepper (optional) *Glaze:* 100ml honey or maple syrup 15ml of your favorite liquor (aged tequila preferred, optional) *Step-by-Step Instructions:* 1. Place cubed fish in a bag or bowl and weigh it on a kitchen scale. 2. Calculate the cure ingredients by multiplying each ingredient by the weight of the fish. Example: For 3.46kg of fish: 3.46kg x 21g salt = 73g salt, 3.46kg x 84g sugar= 291g B. Sugar, 3.46kg x 6g B. Pepper= 21g B.Pepper Precision is key! 3. Add the calculated cure evenly to the bagged fish pieces and refrigerate. 4. Allow the fish to cure for at least 2 days, mixing it periodically for even curing. 5. *Important:* Do NOT rinse the fish! Place the cured pieces on lightly oiled racks in front of a fan until a tacky skin (pellicule) forms, which should take 2-4 hours. 6. Smoke at 130°F for 2-4 hours or until you reach your desired level of smokiness. 7. If using the glaze, brush it on quickly to reduce heat loss. 8. Increase the smoker temperature to 165°F and cook until the internal temperature reaches 145°F or until you achieve your preferred texture for a drier candy.
