The name of the cycle on my particular machine anyway is LEAVEN dough. If you don’t have a cycle on your machine, pick the loaf for a pound and a half and after the first rise, just take your dough out and turn off the machine Method Add your warm water, yeast sugar to your bread pan in your bread maker Then add your flower, salt and olive oil Turn on your cycle When done remove punch it down to get all the air out. Stretch it to a little bit longer than the loaf pan you’re using to bake it in. Making a nice rectangle to square shape. Tightly roll your dough into a log. Pinching the seam and tucking and pinching the end. Place in bread, pan side down Loosely cover with cling wrap, and a clean kitchen towel. Let rise until double in size may take an hour or more or less, depending on the warmth of your dough is in. Preheat oven to 375°F or 190°C Bake for 25 minutes give or take Bread will be a light brown colour, and when you tap the bottom of it, it will sound hollow Remove bread from pan place on a cooling rack Rub the warm bread with soft butter and let cool on a cooling rack Don’t cut the bread until at least 15- 20 minutes later so that your bread doesn’t end up drying out on you by cutting it too early or collapsing on you Enjoy Jerri-ellen
