They freeze beautifully, reheat perfectly, and are incredibly satisfying! 🌟 Become a sponsor and support my cozy low-carb kitchen: / @keto_kitchen 📌 Ingredients: Dough – 6 flatbreads 1½ cups almond flour (150 g) 3 Tbsp psyllium husk (15 g) pinch salt 1 Tbsp olive oil (15 ml) 3/4 cup boiling water (190 ml) Filling 1 bell pepper, diced ½ purple onion, roughly chopped parsley, finely chopped 1 Tbsp olive oil (15 ml) ¾ lb ground beef (300 g) pinch paprika pinch salt pinch black pepper ¼ cup water mozzarella — 20 g per flatbread (120g total) For brushing 1 Tbsp butter leftover chopped parsley 🥑 Macros (per 1 flatbread — out of 6): 396 kcal · 18.8 g protein · 32.5 g fat · 3.7 g net carbs 🔥 Method: Mix almond flour, psyllium, salt, olive oil, and boiling water — the dough thickens instantly. Let it rest while you sauté peppers, onion, herbs, and ¾ lb (300 g) beef. Season, add water, parsley, and cook until juicy and fragrant. Divide the dough into 6 balls. Roll each between two sheets of parchment, fill with 3 Tbsp of the meat mixture and mozzarella, and fold the edges inward. Cook each flatbread on a dry hot skillet for 2 minutes per side. Brush with parsley butter while hot. Stack them so they stay warm and soft.
